14.Water load/unload (bain-marie version) (Rif. 13)

With master switch (1) in ON position, the water can be loaded into the cabinet
tank.
14_1.Water load:
z
Set water load/unload switch -7- at 1. In this way, water will start to load
automatically, the operation will end automatically when the level of the water has
reached the floating level switch.
z
With the water load switch at 1, the level with be restored automatically.
To guarantee complete cleanliness of the cabinet, the water must be removed from the
containment tank.

1 - Move the water load switch to position O, the automatic water load is blocked in
this way.
2 - Remove the tanks to access the “overflow” pipe

15.Demisting system

The cabinet is fitted with fans, positioned under the front window, which allow to
prevent annoying condensate on the glass surfaces (Rif. 15)
z
Activate the anti-condensate fans when they are required
16.Setting and controlling the temperature
Turn the tank thermostat knob (par. 13 n. 3) selecting the desired temperature. We
recommend setting it at 90°C.
The temperature is controlled via the mechanical thermometer positioned on the rear
part of the cabinet near to the control panel and via the thermometer positioned on the
stainless steel frame (Rif. 10).
17.Loading the cabinet
To stock up the cabinet, certain important rules must be followed:
z
Heat the cabinet for at least 2 hours in a way to reach an acceptable internal
temperature.
z
The hot food products must be loaded into the cabinet immediately after cooking
and always at a temperature no lower than 65°.
z
The hot cases are not designed to heat or cook foods but just preserve the product
Water supply pressure 300 kPa (3 bar)
During normal use, the demisting system must not be started
