11. Startup, control and regulation of temperature (Fig. 4 - Fig. 5)
Before inserting or removing the plug, switch off the power at the socket.
- Insert the plug and supply power to the socket.
- Turn on the main switch on the electric panel Rif. 8 (1).
The refrigerating system starts up immediately.
After about 60 minutes’ operation with the case empty, when the case temperature is regular, load the
foodstuffs, already cooled to their storage temperature
.
Control of the refrigeration temperature is made using the mechanical thermometer on the intake
sheet metal (Rif. 6).
Normally the temperature is set in the factory during testing, however the temperature can be
changed, if necessary, using the thermometer/thermostat Carel (OPTIONAL) (Rif. 7) and proceeding
as follows:
- press and hold SEL key for a few seconds;
- the setting will start to blink;
- increase/reduce the set-point using the arrow keys

- press SEL again to confirm the setting.
A temperature regulation that is too low could threaten regular operation of the case, altering the
normal thermostatic pauses.
N.B. All these operation should be performed by specialized technical personnel only.
12. Cabinet loading (Fig. 4)
A number of important rules should be followed in loading the cabinet:
- arrange the items in a uniform way so as not to exceed the loading limit line (Rif. 5); exceeding this
line obstructs the correct circulation of air that may otherwise cause the temperature of the goods to
rise and ice to form on the evaporator;
- the uniform arrangement of the goods, without empty spaces, assures the best operation of the
cabinet;
- it is best to first sell all the goods that have been in the cabinet for a longer time with respect to the
fresher incoming goods (foodstuff turnover).
N.B.The refrigerated cabinet is suited for maintaining the temperature of the product on display
and not for lowering it, so the foodstuffs must be placed in the cabinet only once they have
cooled to their respective preservation temperatures.
Products that have been heated must not therefore be placed in the cabinet.
13. Defrosting and water discharge (Fig. 6)
The Sapporo TWIN line of refrigerated cabines is equipped with an OFF-CYCLE DEFROST system
which stops the refrigeration cycle at intervals, and an automatic device for disposal of the
condensation water.
The defrost water is connected by a special drain and conveyed into a basin in the base of the
cabinet.
A drain in the floor is recommended.
N.B.Periodically have a qualified installer check that the hydraulic connections are in a perfect
state.
14. Anti-steaming
Electric elements (hot wires) are provided to prevent fogging of the insulated glass cabinets.
15. Maintenance and cleaning
Warning!BEFORE ANY MAINTENANCE OR CLEANING OPERATIONS ARE CARRIED OUT, CUT
OFF POWER SUPPLY TO THE CABINET BY MEANS OF THE MAIN SWITCH.
Food products can deteriorate due to germs and bacteria.
Respect of the rules of hygiene is indispensable to ensure the safeguard of consumer health and
respect of the cold chain of which the grocery store is the last controllable link.
