NOTE:
Before baking the first waffles of the day, use a pastry brush to lightly coat the top and bottom waffle
plates with butter or vegetable oil. Do not use non-stick sprays as they can cause build-up on the cooking plates.
Banana Oatmeal Waffles
Cook time: 5 – 6 minutes
Temperature: Medium-High
•
1 cup old fashioned oats (not instant)
•
1 cup all purpose flour
•
1 T double acting baking powder
•
½ tsp baking soda
•
¼ tsp ground cinnamon
•
3 T firmly packed brown sugar, dark or light
•
1-1/2 cups buttermilk
•
2 large eggs
•
2 medium size ripe bananas, thinly sliced crosswise
•
6 tablespoons maple syrup
•
4 tablespoons unsalted butter, divided, melted
1. Preheat the Waffle Maker.
2. In a large bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon and brown sugar.
3. In another bowl, whisk the buttermilk and eggs until well blended.
4. Mash the banana slices with syrup, brown sugar, and half of the melted butter. Add the liquid ingredients to
the bananas. Mix well.
5. Pour the liquid ingredients over the dry ingredients and whisk until just combined. Do not overmix.
6. When the green READY light illuminates, the Waffle Maker is preheated. Turn the temperature control dial to
medium-high.
7. Lift the front handle to unlock and open the waffle maker.
8. Pour approximately 2/3 cup to 3/4 cup batter onto each grid on the lower cooking plate. This batter is thick
and lumpy; use a spatula to spread it to the edge of the cooking plate.
9. Lower the top cooking plate to close the Waffle Maker and rotate unit 180° to the bottom side.
NOTE:
The green READY light will turn on and off as the Waffle Maker maintains temperature.
10. Check the waffles at 5 to 6 minutes. Lift the front handle to unlock and open the top cooking plate gently; if it
pulls, continue cooking for 1 minute and test again.
11. If a crispier outside is desired, turn the temperature control dial to increase heat for future waffle baking and
repeat with remaining batter.
12. Serve the waffles immediately or keep them warm by placing in a single layer, on a rack in the
preheated oven.
