Sweet Shortcrust Pastry
• 250g plain flour
•
50g icing sugar, sifted
•
125g good-quality cold butter, cut into small cubes
•
1 large egg, beaten
•
splash of milk
Only use sweet shortcrust pastry for the pie lid because it will be too brittle to use as a
base in your Gourmet Pie Maker.
1. Weigh and chop the butter.

Sieve the flour and icing sugar from a height of about 30cm into a clean, dry bowl.

Quickly work the butter into the flour using your fingers to make a crumbly mixture
4. Add the egg and the milk to the mixture and work together using a knife
5. Finally bring the mixture together with your hands to form a dough that leaves the
sides of the bowl clean.
6.
Once the dough is smooth and round, sprinkle it with flour and cover with cling film.
Chill the dough in the fridge for a minimum of 30 minutes.
