Smoke:
If you press "
Smoke
" or "
Menu
" once, the preparation time of 2 hours will be displayed. You can adjust
this time from 1 to 12 hours. You can do this by pressing "
+
" and "
–
". After this, press "
Start/Stop
" to
activate the device. It will now go into operation at intervals of 30 minutes.
Smoke stands for cold smoking.
Nice fact! This is one of the oldest smoking techniques.
During cold smoking one of the most important things is that there is a reasonable distance between the
heat source and the food. It is therefore recommended to use the top grid.
Furthermore, lower temperatures are present. So the goal is not to yarn the food.
It is also recommended to weigh the food in the meantime to be able to judge how quickly the food dries.
Example:
15% weight loss during salting and 10% weight loss during smoking is fairly normal when
smoking salmon.
Furthermore, the relative humidity (depending on the food/product) of the room must be 65 - 70% and there
must be a high production of smoke. You can regulate humidity by filling the drip tray with a layer of water.
This high moisture content is necessary because cold smoking often involves prolonged smoking which
could make the food drying out faster.
Hot Smoke:
Hot smoking is used if you want to heat food and / or cook and smoke.
If you press "
Smoke
" or "
Menu
" twice, the temperature of 130°C will be displayed.
You can adjust this temperature within the limits of 120-150°C. You can do this by pressing "
+
" and "
–
".
Then press "
Time/Temp
" to set the cooking time. You can adjust this time from 1 to 8 hours. You can do
this by pressing "
+
" and "
–
". Then press "
Start/Stop
" to activate the device.
Furthermore, the relative humidity (depending on the food/product) of the room must be around 40-50%.
Manual:
This function is for heating and/or cooking food, but not for smoking.
Unlike the other functions, the wood chip tray is not used and/or filled.
