THE CUTS
Place the product in the slider, push the slider down with the pusher (2) and
push it then back to the top. Once the slider is completely above the blade,
rotate it one quarter turn (3). Maintaining the rotated position push the slider
down over the blade and again back to the top (4). Repeat the movements until
the product is completely cut.

STICKS AND FRENCH FRIES
CRINKLE STICKS
Insert the horizontale blade using its straight side. Choose the required
Julienne blade in its storage box under the Mandoline : blade 2, 4 or 10 mm.
With the Mandoline ULTRA, it is also possible to cut CRINKLE
STICKS: insert the horizontale blade using its SERRATED side. Choose
the required Julienne blade in its storage box under the Mandoline : for
such cuts, it is possible to use Julienne blades 4 or 10 mm.

To realize oversized French fries with the
10-mm Julienne blade, push down the
upper plate to the lowest level when you
adjust the thickness (press on the plate).
The upper plate and the Julienne blade go
down.
Use the serrated side of the horizontale
blade.
Adjust the thickness to a very thin thic-
kness between 0 and 2
(see the thickness mar-
kers from 0 to 10 on the frame); this thickness
can be adjusted according to the product
consistency. Push up the upper plate(1) : place
your other hand below the lower portion of
the top plate and raise it as much as possible.
Then tighten the knobs. Insert the horizontale
blade and remove the dicing Cube System.

Adjust the thickness (see the markers from 0 to 10 on the frame).
Cut the product with up-and-down movement.
Be careful : stay always in line when cutting to avoid cutting dices/losanges.
