B. Steaming
Steaming is often used in the Chinese kitchen (e.g. dim-sum). This cooking method is also seen more
and more when preparing western dishes. The wok is an excellent product for this. The half moon
inserts for the wok of 32 cm – 12.6” (ref. 9901) and 36 cm – 14.2” (ref. 9909) are ideal to steam small
amounts of food. A completely round steaming rack is also available for the wok of 32 cm – 12.6” (ref.
9906) and for that of 36 cm – 14.2” (ref. 9908). To steam on this grill you can also use a heat resistant
dish. Afterwards, place a lid on the wok and the steaming can start.
C. Deep frying
The wok is also ideal for deep frying small quantities of food: fish and meat. The half moon insert can be
used to let the oil drain, for example while preparing tempura..
D. Frying/Braising
Due to its shape, size and the material it is made from, the wok is also fit to fry meat in and even to
prepare a roast in.
E. Cooking
The wok is also perfect to just cook in. Asians regularly prepare soup in it.
4. THE WOK OF DEMEYERE AND ITS ACCESSORIES
This wok has been developed in collaboration with chefs from the Far East, Singapore, Malaysia and
Indonesia.
What are the main differences?
1. The use of a layered material up to the rim with a heat conducting core (aluminium), stainless steel inner
and outer walls and a total thickness of 2,3 mm – 0.09”, is ideal for a wok. It gets very hot in the centre of
the base and cooler towards the outside. The result: even ideal heating, no irregular burning of oil, minimal
use of energy.
2. The lids close the woks perfectly, even when a steaming rack or a half moon insert is being used.
3. The high lid (32 cm – 12.6”, ref. 7532) has a steam escape regulator.
4. The plate rack (ref. 9901), in the form of a half moon, can be used in a wok of 32 cm – 12.6” for draining
after deep frying e.g. tempura (for a wok 36 cm – 14.2”, ref. 9909).
5. The inner and outer edges of the wok are manufactured using 18/10 stainless steel and treated with
Silvinox®. This enabled stainless steel has a greater resistance against decolouration.
