Batter to dip the pieces of food in:
• 1/2 cup special sifted very fine Japanese Tempura flour which you can find in all good supermarkets • 1 egg white,
beaten • 1 tablespoon corn flour • 1 teaspoon yeast • 1/2 l (0.5 qt) water with ice cubes
Dip sauce:
• 1/2 cup soy sauce • 1/4 cup sweet sauterne sauce • 1 cup chicken stock • 1/3 cup sherry • 1 teaspoon sugar
Preparation:
All ingredients should be kept cool after cutting. The batter should be prepared just before deep frying so everything
is still very cold. Prepare the dip sauce.
Preparation method:
1. Dip the very cold food in the cold batter, shortly drain it and deep fry immediately in the hot oil until golden brown.
2. Leave the deep fried pieces to drain one or two minutes on the half moon insert.
3. Put some lemon, dip sauce and rice on the plate.
4. Serve
TIP: tempura preparations can also be used as a starter without rice.
SPECIAL NASI GORENG
Special nasi goreng is a typical Indonesian recipe. There are several variants.
Ingredients:
• 250 - 300 g (9-11 oz) rice • 250 g (9 oz) chicken • 200 g (7 oz) pork meat • 200 g (7 oz) bacon
• 6 shallots • 1 onion • 1 celery cut in pieces • 2 small cloves garlic • 4 tablespoons peanut oil • 2
teaspoons sambal oelek • some pieces of trasi (a special preparation based on shrimps - not absolutely
necessary) • 2 teaspoons “ketjap” (especially sweet ketjap is recommended) • 1/2 teaspoon djentan •
Salt and pepper • 4 eggs • 4 small gherkins • parsley • krupuk • 4 bananas
Preparation:
1. The rice should be cooked very dry.
2. Heat 4 tablespoons of oil in the wok.
3. Deep fry the finely chopped onion, shallots, celery, garlic, sambal oelek and some crumbled trasi. When
the onion and the shallots are golden brown, remove them out of the oil.
4. Then stir the chicken, pork and bacon trough the oil with the wok spatula for about 5 minutes.
5. Add some pepper, salt, djentan, add the fried shallots and onions.
6. Now add the cooled down rice and regularly stir with the wok spatula.
7. Fry the 4 eggs.
Serve the nasi goreng and garnish with the eggs, the chopped gherkins and some parsley.
Fry the bananas which are cut lengthwise and serve together with the krupuk with this lovely nasi dish.
