Preparation:
1. Tenderize turkey fillets finely, add salt and pepper.
2. Chop basil, mash cheese with fork and place together with basil onto ham slices, carefully wrap the
ham slices and place on turkey fillets; also wrap and clamp with toothpick.
3. Mix lemon juice with oil and spread on fillets.
4. Grill for 10-12 minutes and always spread the remaining lemon mix when flipping.
GRILLED BEEF
Raclette from goat cheese
recipe for 4 persons
4 thin pieces of veal
4 slices of prosciutto
4 sage leaves
4 round goat cheeses
1 spoon of fine olive oil1 spoons of olive oil
salt and ground black pepper
Preparation:
1. Cut cheese lengthwise into three circles, each with the same thickness. Add salt, pepper and drizzle
olive oil. Put into raclette pans.
2. Roast veal fillets on the top plate, place ham and sage leaves in between.
3. Insert the pans beneath the grill. The cheese shall not melt; it should be lightly roasted and flipped
with a flat spatula. This Italian recipe can be served with mozzarella or Gorgonzola.
Raclette feast
recipe for 8 persons
250 g of beef fillets cut into 8 slices
250 g of Swiss raclette cheese cut into slices
1 large celery stalk, cut into thin, diagonal slices
small celery leaves for decoration
Marinade preparation:
2 spoons of sunflower oil, or similar
2 spoons of red wine
1 spoon of mustard
1 spoon of Guinea pepper
Preparation:
1. Mix all ingredients for marinade, cover the beef with marinade and leave in refrigerator for 30
minutes.
2. Add salt to the meat slices and place into the raclette pan.
3. Grill quickly, remove and place celery slices and then slices of cheese onto the top. Decorate with
small celery leaves.
