For pressure cookers of over 10 L capacity:
a minimum of 1,000 mL is recommended for
short cooking times. For cooking times over
15 minutes, increasing the minimum amount
of liquid to 1,500 mL is recommended.
Using less liquid can damage or overheat
the pressure cooker (Fig. 3).

When using your pot to steam, add
broth or water without surpassing the
bottom of the basket (sold separately) (Fig.
4). You can find further information, recipes
and tips on steaming by visiting the Fagor

Note that some foods, such as barley,
fruits and pasta, produce foam and
could block the pressure release systems
(rotary valves (22) and safety valves (7))
during cooking. These foods must not be
cooked in a pressure cooker.

To prevent damage to the inside of the
pot, it is important to add salt once
the contents start to boil. This will help
it dissolve completely. After the cooking
time has passed, avoid leaving the food
in the cooker for a long time as the acidic
components of the food and salt can
cause corrosion if they remain in it for an
extended period.
Control of the valves
The valves are safety devices. Before using
your pressure cooker, always check that the
safety valves are not blocked as this could
defeat their operation.
1. Chimney (23).
Remove the lid (1) and
the rotary valve (22). Check from the
inside of the lid (1) that the chimney (23) is
completely clean. Otherwise, clean it with a
fine rod (Fig. 5).
2. Safety valve (7).
Check that the safety
valve (7) operates correctly by pressing the
valve with a fine rod from inside the lid (1)
(Fig. 6). To operate properly, it should slide
freely from top to bottom. If it is blocked,
do not use the pressure cooker. It must
be taken to a Fagor-authorised technical
service centre for servicing.
How to close the pot and
start cooking

Make sure that the silicone sealing
ring (8) is fully seated in place inside
the inner ring around the lid (1).

With the knob (33) in its lower position
(by turning it anticlockwise) (Fig. 7),
fit the lid (1) to the body (11) (Fig. 8) by
engaging the ends of the clamp bar (35)
with each clamp hook and make sure it is
properly seated by running your fingers
around it.
