sWeeTCOrN friTTers WiTh aVOCaDO saLsa

Ingredients:
Corn fritters:
3 large corn cobs (or 400g tin)
1 small red onion, finely diced
2 eggs
½ cup coriander leaves
125g plain flour
1 tsp baking powder
Sea salt & black pepper
Olive oil cooking spray
Avocado salsa:
2 ripe avocadoes, stones removed and diced
½ cup coriander
2 tbs lime juice (or lemon juice)
3 spring onions, finely chopped
1 punnet cherry tomatoes, halved
1 dash Tabasco sauce (optional)
Sea salt & black pepper
Method:

. For the avocado salsa, combine all ingredients in a small bowl and set aside for
the flavours to infuse.

. Meanwhile, place 2/3 of the corn kernels, onion, eggs, coriander, flour, baking
powder, salt and pepper in a food processor and blitz until combined. Pour this
mix into a large bowl and stir through remaining corn.

. Pre-heat your George Foreman® Sear & Sizzle Griddle and spray lightly with
olive oil cooking spray. Drop 2 heaped tablespoons of mixture per fritter onto the
griddle and cook 1-2 minutes each side until lightly golden brown.

. Serve topped with the avocado salsa and a big squeeze of lemon juice.
