Flounder and Asparagus Packets
4 lg. frozen flounder fillets
½ cup cilantro, chopped
4 tsp. butter
1 lb. asparagus, trimmed
½ tsp. paprika
1 lime, cut into 4 wedges
½ tsp. garlic powder
salt & pepper, to taste
cayenne pepper, to taste
1. Lay out 4 squares of aluminum foil (large enough to loosely wrap 1 fillet
in each).
2. Place 1 fillet (still partially frozen is fine) in the center of each square and
dot each with 1 tsp. butter.
3. Sprinkle each fillet with paprika, garlic powder, cayenne pepper and
cilantro.
4. Divide the asparagus spears equally and place on top of the fish.
5. Seal the foil into 4 loose packets and place them on the grill.
6. Cover and set the temperature control to 4 (350
o
F) for 10 minutes. Fish is
ready when it flakes easily with a fork.
7. Serve each packet with a lime wedge, salt & pepper.
Serves 4
