8.1 Sanitizing

1. If using mix bags, clamp the mix inlet
hose to the bag connector, remove the
seal on the mix bag, remove air pockets
from the mix bag, and snap the connec-
tor to the mix bag. Place the pressure
relief hose from the pump into a sani-
tized container. Proceed to step 3.
2. If using mix containers hold the top 6”
portion only of the pickup tube and
insert into sanitized mix container.
Place the pressure relief hose from the
pump into the sanitized container. Fill
the mix container with mix and cover.
3. Place an empty container on the drip
tray under the dispensing head.
Priming the freezer removes excess air from
the freezing cylinder and sets the proper
overrun for the first cylinder of product. To
prime the freezer refer to figure 8-1 for the
RMT pump and figure 8-2 for the DPR pump
and follow these steps:

12. Leaving the spigots open, turn the
selector switches to the “OFF” position.
Leave the pump switches in the “ON”
position and allow the pump to push all
remaining sanitizer out of the freezing
cylinder. When the sanitizer quits
flowing, turn the pump switch to the
“OFF” position.
NOTE:
Some sanitizer will remain in hoses
and cylinders.
13. Remove the pickup tubes from the mix
containers, holding the top 6” portion
only.
14. Remove the mix containers and empty
any remaining sanitizer.
IMPORTANT:
DO NOT use the “AUTO” position with
sanitizer in the cylinder. The freezer will
be damaged.
10. Allow the pump to stop pumping, then
turn both selector switches to “CLEAN”
and allow the beaters to run for
5
minutes
. At this time check for leaks
around the head, drain tube, clamps
and pumps.
11. Slowly open and close the spigot ten
times. Open the spigots and allow the
pumps to push the sanitizer out of the
cylinders.
