Dicing Assembly Recipes
Apple Fritters
Ingredients:
2 large apples, peeled, cored
2 cups (473 ml) all-purpose flour
1/4 cup (59 ml) white sugar
1 tablespoon (15 ml) baking
powder
1/ 2 teaspoon (2.5 ml) ground
nutmeg
1/ 4 teaspoon (1.3 ml) ground
cinnamon
1 teaspoon (5 ml) salt
2 large eggs
1 cup (237 ml) milk
1/ 2 cup (118 ml) confectioners’
sugar for dusting
Directions:
1.
Heat oil to 375°F (191°C) in deep fryer.
2. Assemble food processor with the dicing assembly. Dice apples.
Set aside.
3. In medium mixing bowl, combine flour, sugar, baking powder,
nutmeg, cinnamon and salt.
4. In another small mixing bowl, beat together eggs and milk.
Stir milk mixture into flour mixture until smooth. Fold in apples.
5. Using a small scoop (about 2 tablespoons [30 ml]), carefully drop
about 6 fritters at a time into the preheated oil.
6. Cook 3 to 4 minutes. Turn for even browning on both sides.

Drain on paper towels and dust with confectioners’ sugar.
Serve warm.

Classic Egg Salad
Ingredients:
12 large hard-cooked eggs, cooled and peeled
1/2 cup (118 ml) mayonnaise
1/4 cup (59 ml) sweet pickle relish
2 tablespoons (30 ml) spicy mustard
2 teaspoons (10 ml) salt
1/4 teaspoon (2.5 ml) black pepper
Directions:
1. Assemble food processor with the dicing assembly. Dice eggs.
2. In a medium mixing bowl, combine mayonnaise, relish, mustard,
salt and pepper. Gently stir in eggs.
3. Refrigerate until ready to serve.

To serve as an open-faced sandwich, start with a
slice of hearty bread, top with arugula, egg salad, and sprinkle with
chopped cooked bacon.
