Once full, the display shows “IS POT FILLED” “YES NO”. Press
√
button and display shows “CLOSE RETURN VALVE” , followed by
“CONFIRM”.
Turn the yellow return handle to close valve, press
√
button. Display shows “OPEN PURGE HANDLE”followed by
“CONFIRM”.
NOTE: Purge valves are available on select units for solid
shortening. Perform step 17 if purge valve is available,
otherwise continue to step 18.

Close the black purge handle and then press
√
button. Check the
level of oil in vat and add fresh if necessary until oil is level with the
top indicator line on rear wall of vat,

Press to turn on heat and continue cooking.

Open center door, unlatch drain pan stop and pull the drain pan
assembly from under fryer.
2.
Unlatch lid on discard shuttle and open lid. Roll discard shuttle
under fryer. Figures 2 & 23.
3.
Open drain, using the appropriate red drain handle and drain oil
from vat.
4.
Once vat is empty, close drain valve and remove the discard
shuttle from under fryer and replace with the filter pan
assembly.
