3.2 - Gnocchi and Chicche production (Gnocchi machine GN20)
Suggested mixture
Dried potato flakes
1 kg
Wheat flour
400 g
Water
1,6 kg
Salt

For the preparation of the potato mixture you can use a
ready mixed product for gnocchi or dried potato flakes.
If you use a prepared mix it is necessary to follow the
directions given by the producer of the product.
If you use dried potato flakes you can mix the ingredients in
a mixer according to the proportions given in the table on
the side. The mixture will be ready in 15 - 20 minutes.
The mixture must be soft and well mixed and not show clots
(too dry). A wrong mixture can avoid the good functioning of
machine and seriously damage it.
Unscrew the mould’s fixing pin [3] by turning the knob [4]
and remove the pin completely.
Open the cover [1] and remove the ravioli mould [2].
Remove the sheet rollers support [5] from the front side of
the machine.
