CORNBREAD
Ingredients
• 4oz butter, melted
• 8 fl oz milk
• 1 egg
• 1 ¼ cups polenta
• 1 cup plain flour
• ½ cup sugar
• 1 tablespoon baking powder
• ½ teaspoon salt
Method
1. Grease a cake tin or small camp oven.
2. In a bowl beat the melted butter, milk and egg
until well mixed.
3. Add the polenta, flour, sugar, baking powder
and salt. Stir until just combined.
4. Pour batter into the pan and spread evenly.
5. Bake at 350°F for 20–30 minutes or until
golden and a skewer comes out clean.
