Vegetables

PREPARATION

Wash all vegetables thoroughly and remove any blemishes, then slice evenly to a 
thickness of between 5mm and 10mm. Pre-treat where recommended. Read 
following chart for further information

PRE-TREATMENT

Blanching may be required to speed up the drying process for certain vegetables.

STEAM BLANCH

 

Some fruits with natural protective wax coatings e.g. figs, grapes and prunes, need 

to be blanched to speed the drying process. To blanch place whole fruits in boiling 
water for 1 - 2 minutes. Then plunge into ice cold water, slice and commence 
drying.

BLANCH

Soak vegetables in boiling water for 1-2 minutes. Then plunge into ice cold water and 
slice.

DRYING TEMPERATURE

Most vegetables should be dehydrated at a temperature of 75 degrees C.
