INSTALLATION OF PLATES AND BLADES
The machine can be supplied with the ENTERPRISE cutting system or with the UNGER system.
A- The ENTERPRISE simple cutting system consists of a single blade, a plate and a supplementary collar (not
available for the PM/PK-114/114L version).
B- The UNGER simple cutting system consists of a single blade, a plate and a supplementary collar.
C- The UNGER double cutting system consists of a 3-hole plate, a double cutting blade, a final cutting plate and
a supplementary collar.
D- The UNGER triple cutting system consists of a 3-hole plate, a double cutting blade, an intermediate plate, a
double cutting blade, a final cutting plate and a supplementary collar. (Not available for the PM/PK-70
version).
A/B- ENTERPRISE/UNGER SIMPLE CUTTING SYSTEM:
It is used to grind fresh product that requires no special processing.
The arrangement of the cutting assembly is the following: once the auger is in place, the blade is installed with the
cutting face directed towards you. Then the plate is put on. Ensure that the keyway fits into the mincing head key
(top part).
As a general rule, keep in mind that it is advisable to install the cutting plate always with the same side in contact
with the blades to thus maintain the perfect fit that occurs as the blade rubs against the plate.
Finally, install the supplemental collar and screw on the nut without tightening it excessively. It is preferable, when
the end of the thread is reached, to slightly re-tighten it and thus leave it adjusted well.
C- UNGER DOUBLE CUTTING SYSTEM:
It is used when better results are required during the mincing operation, meaning for semi-frozen and frozen meat
and when greater production is required or less rough handling of the meat is required during the mincing
process. It should be pointed out that the double cutting system minces the meat progressively, given that by
passing through the three-hole plate, it is initially pre-cut into pieces, so that when the meat reaches the final
plate, it requires less effort to go through. The result is that the meat has a better look due to the fact that it is
exposed to smoother processing.
The arrangement of the plates and blades is the following:
The first piece to be put on after the auger will be the 3-hole plate. Keep in mind that the widest part of the plate
must remain facing the auger (towards the back). Then the double cutting blade is put on with the central pin
facing you so that when the final plate is positioned, the pin fits into the central orifice of the plate. This installation
likewise orients the paddles in the counter-clockwise direction (looking at the machine from in front). Put on the
supplemental collar and tighten the nut as previously described. The machine is ready to operate.
For grinders with a 100-mm diameter or smaller mincing head, a sign must be placed on it stating “DANGER. Do
not use a final plate with holes that are equal to or greater than 8-mm in diameter or oval-shaped, unless an
additional guard is installed”.
Consult your distributor if one is required.
D- UNGER TRIPLE CUTTING SYSTEM:
Similar to the preceding system, it is used when better results are required during the mincing operation, meaning
for semi-frozen and frozen meat, for when production is going to be increased and when the meat requires
smoother handling during the mincing process. The triple cutting system provides even more progressive meat
mincing, given that even though it is initially cut into pieces or pre-cut when going through the three-hole plate, it
is then subject to consecutive cutting by two sets of blades and the plate. The result is that the meat has a better
look due to the fact that it is exposed to smoother processing.
The arrangement of the plates and blades is the following:
The first piece to be put on after the auger will be the 3-hole plate. Keep in mind that its most open part must
remain facing the auger (towards the back). Then the first double cutting blade is installed, then the intermediate
plate, then second cutting blade and then the final plate. Keep in mind that the orientation of the rotation direction
of the blade paddles is counter-clockwise (looking at the machine from in front). Finally, install the supplemental
collar and the nut as previously described. The machine is ready to operate.
For grinders with a 100-mm diameter or smaller mincing head, a sign must be placed on it stating “DANGER. Do
not use a final plate with holes that are equal to or greater than 8-mm in diameter or oval-shaped, unless an
additional guard is installed”.
