Apple cinnamon cake
Preparation time: 90–100 minutes

Ingredients
225 g softened butter
200 g caster sugar
4 eggs
450 g plain flour
5 tsp baking powder
1 tbsp cinnamon
600 g apples, peeled and finely sliced
150 g cranberries
For the cake tin

Method
Beat the butter until creamy and add
the sugar and eggs a little at a time. Sift
the flour, cinnamon and baking powder
together and beat into the mixture.
Then fold the apples and cranberries
into the mixture.
Spoon the mixture into a greased and
floured ring tin and bake until golden.
