Bacon or herb baguettes
Preparation time: 80–110 minutes

Ingredients
1 cube fresh yeast (42 g) or 1 packet
dried yeast (7 g)
250 ml lukewarm water
250 g strong white flour
250 g strong wholemeal flour
1 tsp sugar
2 tsp salt
1/2 tsp pepper
3 tbsp oil
150 g finely diced cooked ham or
bacon, or 1 tbsp each of chopped
parsley, dill and chives
For glazing
2–3 tbsp milk
1 egg yolk

Method
Dissolve the yeast in lukewarm water.
Then add to the white flour, wholemeal
flour, sugar, salt, pepper and oil and
knead for 3–4 minutes until you get a
smooth dough. Fold in the diced ham
or bacon or the herbs.
Place the dough in the oven and prove
at 50 °C using Conventional heat for
approx. 40 minutes, then knead again
briefly.
Shape the dough into two approx.
35 cm long baguettes and place them
on the greased glass tray.
Mix the egg yolk and the milk together
and brush the baguettes with it.
With the Automatic programme:
Place the baguettes in the oven and
bake until golden.
With all other functions:
Place the dough in the oven and prove
at 50 °C using Conventional heat for
approx. 20 minutes, then bake until
golden.

Tip
12 rolls can be made instead of the
baguettes. Cut a cross in the top of
each, and brush with beaten egg yolk.
Bake until golden.
