Salmon lasagne
Preparation time: 90–100 minutes
Serves 4
Ingredients
400 g smoked salmon, thinly sliced
12 sheets of uncooked lasagne
2 onions, diced
20 g butter
2 tbsp flour
600 ml milk
300 g double cream
Salt
Pepper
2 tbsp fresh dill, chopped
3 tbsp lemon juice
1 fennel bulb
100 g grated Cheddar cheese

Method
Lightly fry the onions in the butter. Add
the flour, mixing well. Keep stirring
whilst you add the milk and cream.
Season liberally with salt, pepper and
lemon juice. Simmer for 10 minutes,
then stir in the dill.
Peel the fennel and shred thinly. Pour
boiling water over it and drain well.
Spread some sauce over the bottom of
an ovenproof dish and place four
sheets of lasagne on top, followed by a
layer of fennel and salmon. Build up a
further layer of sauce, lasagne, fennel
and salmon. Top with the rest of the
lasagne and finally the remaining sauce,
then sprinkle with grated cheese before
baking uncovered.
