* Mouloukhia Recipe (Egyptian traditional recipe)

The Mouloukhia is a famous Egyptian recipe 

that derives its name from “Mouloukia”, 

which literally means ROYAL, as this meal 

used to be served to the kings and queens 

for its finesse and delicacy.  It is traditionally 

served with plain rice and oriental green 

salad.

Main ingredients:  

 

- Mouloukhia leaves, chicken and garlic.

 

- Note: you may replace the chicken 

with beef, veal, or rabbit and maintain 

the recipe. In Alexandria, Mouloukhia is 

sometimes served with shrimps instead.

 

- Time of preparation: 25 minutes

 

- Time of cooking: 25 minutes

Serving: 4 persons

Needed:

 

- 1 ½ tbsp crushed garlic, 3 tbsp margarine, 1 ½ tbsp dried and ground coriander, salt, ½ 

kg chopped Mouloukhia, 1 chicken.

Directions:

• 

Wash the chicken well then boil until it’s tender.  Strain and reserve 3-4 cups of the 

broth.  Cut the chicken in 4 quarters.

• 

In a medium skillet, add 2 tbsp margarine.  Fry the chicken pieces until golden.

• 

In a deep pan, heat the reserved broth and bring to a boil over high heat. Add 1 tbsp 

coriander and ½ tbsp of garlic.  Reduce the heat, add the chopped Mouloukhia and 

leave to boil once more, uncovered.  You may add more broth if the texture is too thick.

• 

While Mouloukhia is boiling, in a small skillet heat 1 tbsp of margarine then add 1 tbsp 

coriander, 1 tbsp garlic and stir until golden brown.  Immediately pour the ingredients 

of the skillet onto the Mouloukhia in the deep pan.  Do not stir.  Take the Mouloukhia off 

the heat and half cover the pan for 2 mins.

Stir the Mouloukhia just before serving.  Serve the Mouloukhia in a bowl and serve 

the chicken and the rice separately in a platter.  You may season the Mouloukhia with 

Lemon in your plate.
