Oxygen is the worst enemy of fresh produce!
The biggest reason that food loses nutrients, consistency, taste and quality
is oxygen. Oxygen also causes freezer burns on food stored in the freezer
and enables the development of micro-organisms. This is why the use of
conventional storage methods such as storage in regular plastic bags and
containers is not optimal because they actually lock in the air together with the
food.
Vacuum packing removes the oxygen, thereby sealing in the taste and the food
is kept fresh longer. Removing oxygen and storing food properly in either the
refrigerator or freezer can also inhibit the growth of micro-organisms that can
later develop into mould, yeast and bacteria.
