Fish and Shellfish
Salmon Pâté

spring onions, sliced

drained and bones removed

Method:
Place butter and spring onions in a 1-litre casserole dish. Cook
on HIGH for 2 to 3 minutes. Add flour, mustard, salt and pepper.
Stir and cook on HIGH for 1 minute. Stir in sour cream,
mayonnaise, wine, lemon juice and salmon. Purée mixture in a
blender or food processor.
Place gelatine and water in small dish and cook on HIGH for 20
to 30 seconds. Allow mixture to cool slightly. Stir into salmon
mixture. Pour into a 2

cup mould and refrigerate until set.
Cheesy Lobster Mornay
Serves: 2
Ingredients:

butter
3 tablespoons
flour

grated cheese

cooked lobster
1 tablespoon
Chopped parsley
pinch of paprika
2 tablespoons
grated cheese, extra
Method:
Melt butter on HIGH for 30 to 60 seconds in a 4-cup jug. Add
flour, stir and cook on HIGH for 20 to 30 seconds. Add milk
gradually. Stir well. Cook on HIGH for 2 minutes, stirring
halfway through cooking. Add cheese and parsley, mix well. Cut
lobster in half lengthwise. Discard all inedible parts. Remove
meat and chop. Preheat oven on Grill 1.
Mix lobster meat with cheese sauce. Spoon back into lobster
shell. Sprinkle with extra cheese and paprika. Place lobster
halves on a round tray. Place on High Rack and cook on Grill 1
for 5 to 6 minutes. Serve with lemon slices and parsley.

Lemon Pepper Fish
Serves: 2
Ingredients:

fish fillets

cracked black pepper
Method:
In a 1-litre dish place all ingredients. Cook on MEDIUM for 6 to
7 minutes. Stand for 3 minutes.
Thai Fish Cakes
Serves: 4 to 6
Ingredients:
500 g
white fish fillets
1 tablespoon
red curry paste
2 tablespoons
cornflour
1 teaspoon
chopped chilli
1 tablespoon
fish sauce
3
shallots, chopped

coriander leaves
2 tablespoons
oil
Method:
Preheat oven to Grill 1. Place all ingredients except oil in a food
processor and blend until smooth. Shape 2 tablespoons of
mixture into cakes and place onto an oiled tray. Place on High
Rack and cook on Grill 1 for 10 to 12 minutes turning halfway
through. Serve with sweet chilli sauce.
