 Comal. What’s a comal? It’s the most essential tool in 

the Mexican kitchen, designed for making a wide variety of traditional 
dishes including fajitas, carne asada, roasted vegetable salsa and 
tortillas. It’s also great for pancakes, grilled meat and grilled vegetables.
Instead of traditional pre-seasoned or raw cast iron, which requires 
lots of maintenance, our cast iron Comal features a durable enameled 
exterior finish, and matte black enamel interior finish designed to easily 
release foods. These finishes are extremely durable, scratch resistant, 
easy to clean and require no seasoning. Stainless steel accents provide 
a modern twist and are so beautiful, you can bring it right to the table 
for serving! 
Cast iron is known for easily achieving high temperatures.    
When combined with the specially-formulated black enamel interior 
finish, our Comal becomes ideal for dry heat cooking with no added fat 
or oil. Higher temperatures are easily achieved by allowing the Comal 
to heat thoroughly and gradually over MEDIUM heat. To maintain the 
temperature, simply lower the heat. The black enamel interior is not a 
nonstick surface but has excellent release properties that will actually 
improve with use. 
Sear and brown meats, roast chilies and cook tortillas! The large surface 
of the Comal is perfect for cooking or re-heating as many as four 
tortillas at once. It can be used on the stovetop, in the oven and even 
on the grill, offering lots of cooking flexibility when preparing traditional 
and new family favorites in your own kitchen.

Before First Use

•  Wash your Comal in hot, soapy water, then rinse and dry  

 

  thoroughly. This removes any manufacturing oils or coating  

 

  materials that may still be on the surface.  
•  We recommend rubbing the rim of your Comal with a little  

 

  vegetable oil to protect the edge. Add a small amount of oil  
  to a soft cloth or paper towel, rub around rim and  
  then wipe clean. 

How to Use

•  Your Comal is safe for use on all cooktops, including gas, electric,    
  glasstop, ceramic and induction. It’s also oven safe and can be used  
  on your outdoor grill.   
•  Glasstop and ceramic cooking surfaces should be clean and free    
  of food residue before each use. Consult appliance manufacturer’s   
  instruction manual before first use.   
• 

Always

 lift your Comal when moving it; never slide it, as this can    

  damage your stovetop surface and the base of your Comal.   
•  Always allow your Comal to heat gradually and thoroughly at  

 

  MEDIUM heat for efficient cooking and even results.   
•  It’s safe to preheat your Comal while empty to reach a hot surface   
  temperature for searing and caramelization.    

Interior Surface

•  Your Comal’s black enamel interior surface has been specially  

 

  designed for higher surface temperature cooking, which is not the   
  same as simply using a piece on high heat.  
•  With cast iron, higher surface temperatures can be achieved by    
  allowing any piece to heat thoroughly and gradually on a MEDIUM  
  heat setting. Once your Comal is hot, you can lower the heat setting  
  to maintain the surface temperature. This makes the black enamel   
  interior ideal for browning, grilling and searing.
•  The black enamel will allow a patina to build on its surface with    
  continued use. A patina is desirable and is the result of the natural   
  oils and fats from foods baking on the hot surface. The patina should

 be cleaned off, as it enhances the cooking performance and    

  the release of foods. It also reduces the need for surface oiling.     
      

Heat Recommendations

•  Select a burner that is the same size or SMALLER than the diameter  
  of the base of your Comal.  
•  If you are using a gas stove, the flames should not extend up the    
  sides of your Comal.
•  We recommend using a LOW to MEDIUM heat setting for the  

 

  best results.   
• 

Do not

 use high heat to preheat your Comal, as overheating will    

  cause food to burn or stick.

Oven Use

•  Your Comal is oven safe to 500˚F.  
•  It is also broiler safe to 500˚F. 
•  The handles and cooking surface will become 

hot

 during use.    

•  Always use oven mitts or potholders when lifting or moving  

 

  your Comal.

Grill Use

•  Your Comal can be used on charcoal and gas grills. However,  

 

  cooking over charcoal will increase the cooking time for most food.  
•  Always place your Comal on grates. Never place directly on charcoal.  
•  Safe up to 500˚F.   

Tools to Use

•  For best performance, we recommend using tools with    

 

  silicone heads.   
•  To avoid cracks or chips on the coated surfaces, do not knock  

 

  utensils on the rim of your Comal. 
•  Knives or utensils with sharp edges should not be used to cut foods  
  in your Comal.
