4. Insert the bottom part of the bracket
into the top part of the bracket (C).
5. Place the power supply unit into the
holder and secure it using the screws
provided (D).
6. Remove the protective cover to the
power supply cable connection on the
power supply unit.
7. Insert the power cable plug into the
socket on the power supply unit.
8. Place the power supply unit into the
holder.
9. Plug the mains cable plug into a mains
power socket.
CAUTION! Risk of fall-
ing! Place the mains cable in such a
way that nobody can trip over it.

If the mains switch lights up, the Var-
ioSmoker is switched on. If you are not
planning on smoking food immedi-
ately, use the switch on the power
supply unit to switch off the Var-
ioSmoker. You can smoke with the
VarioSmoker.

Intelligent cooking paths
Go through these additional steps if your
appliance is an iCombi Pro and you want
to use the intelligent cooking paths as-
signed to the VarioSmoker.
1. On the power supply unit, remove the
protective cover on the USB port.
2. Connect the USB plug to the power
supply unit and to the USB port on the
unit.

The unit will detect the VarioSmoker.
Smoking will be added to the home
screen as an additional cooking
method:
Pressing this button will
display all of the intelligent cooking
paths assigned to that cooking
method.

Operation
DANGER
Harmful gases can develop when
smoking food
Using a VarioSmoker in a combi-
steamer with the exhaust system
switched off could result in users
breathing in harmful gases and
potentially suffocating.

Only use the VarioSmoker in a
combi-steamer with the exhaust
system switched on.
6.1 Smoking material

Only use commercially available wood
chips or pellets.
n
Do not use dusty material such as
sawdust.
n
Do not douse smoking material in al-
cohol.
n
Adding water to the smoking material
will mean the VarioSmoker takes
longer to preheat. It will not prolong
smoking time.
6.2 Smoking food
1. Open the cover and fill the Var-
ioSmoker with smoking material.
2. Close the cover.
CAUTION! Fire haz-
ard! If the cover on the VarioSmoker
does not close properly, the smoking
material could ignite, setting the
cooking system on fire.
3. Open the cooking cabinet door.
4. Slide a Gastronorm container (hotel
pan) into the top or bottom level of the
cooking cabinet and place the Var-
