Keep some yogurt for the next batch. You can repeat the process up to 10 times before the bacteria
expire. For a new batch you will need new, plain yogurt or freeze-dried lactic acid bacteria.
Yogurt for Any Taste
Jam, honey, caramel, fruit, muesli, spices - you can add anything you like to enhance the flavor of your
fresh yogurt.
If you want to add fruit, keep in mind that fruit acid kills the lactic acid bacteria and the fermentation
cannot take place. The treated milk must not be mixed with fresh fruit. We therefore recommend
that you mix fresh fruit (or jam, honey or boiled fruit) in with the finished yogurt, or place boiled fruit
or jam into the portion jars first and then add the treated milk.
If you would like to add flavor to the yogurt, you can either add a few drops of flavoring or extract to
the milk which you are heating during the preparation phase, or you can place spices, peels, etc.,
into the milk for around 12 hours; remove everything before you begin making the yogurt.
You can very easily use yogurt to make Ayran, a refreshing Turkish drink. Stir 2 parts yogurt
together with 1 part iced water and a little salt to create froth (ideally in a food processor). Garnish
with lemon balm or peppermint. Or you can leave out the salt and add sugar and mango to the
yogurt & water mixture. You will then get a mango lassi, which is a popular drink in India.
