Ingredients
2 large chicken breasts,
cut into medium sized pieces
1 large onion, finely chopped
2½ cm fresh ginger, grated
2–3 garlic cloves, crushed
2–3 tsp paprika
2 tsp turmeric
1 tsp cayenne pepper
1 tsp coriander powder
1 tsp chilli powder
(or fresh chillies, finely chopped)
1 tsp curry powder
50 g low fat natural yoghurt
Juice and zest 1 lemon
Olive oil
Method
Preheat the Hot Air Fryer to 200 °C.
In an ovenproof dish, mix the onion, garlic, herbs, spices, lemon juice and zest, olive oil
and yoghurt. Add the chicken pieces and mix well until the chicken is covered. Cover
the dish and leave it to marinade in the refrigerator for approximately 2–3 hours.
Once the chicken has marinated, place it into the non-stick coated cooking
basket and cook for approximately 15–22 minutes.
