pressing the red button (6/a).
The blade
should rotate anticlockwise looking at the
meat slicer from the blade cover side.
If this is not the case, reverse two of the
three wires in the plug or in the socket.
Three-phase motors in EC professional meat
slicers can operate at a 230 V three-phase
voltage or at a 400 V voltage.
Unless specified otherwise, the electrical
connections are at 400 V. To adapt to a 230 V
three-phase mains, you must seek assistance
from the SUPPORT CENTRE.
CHECKING GENERAL OPERATION
Before starting the test, check that the plate is
properly locked. You can then check that the
appliance is working as follows:
·activate the green start button (4) (Figure 8)
and the red stop button (6/a).
·check that the meat holder plate and meat
press arm move smoothly.
·check that the gauge plate works and is
adjusted properly using the graduated handle;
·check that the blade sharpener works properly;
·check that the meat holder plate can be
dismantled alone by putting the graduated
handle in the “0” position and that after it has
been dismantled the handle remains in this
position;
·check whether the appliance stops when the
blade cover button is unscrewed.
USING THE APPLIANCE
OPERATION
MANUAL OPERATION
·Unlock the carriage by setting the switch (8) to
the manual position (A).
·Press Start blade (4) and check that the carriage
slides manually. When the appliance stops
operating, press Stop blade (6/a) to switch it off.
COMPLETE AUTOMATIC OPERATION
With the appliance switched off, firstly turn the
carriage locking switch (8) into the automatic
position (B).
·Press the slice counter switch (2) automatic
button (A).
·The display (7/a) will light up to allow you to
program the number of slices that you want to
cut, using the buttons (7/b - da dx: units, tens,
hundreds).
·Press Start blade (4) and Start carriage (5).
·During automatic operation, the number of
slices that the PLC has programmed will be
shown on the display (3) and the carriage will
stop as soon as this number is reached.
·At this point, press Stop blade (6/a).
·To change the length of the carriage range,
press +/- (1) to optimise the slicing time.
SEMI-AUTOMATIC OPERATION
With the appliance switched off, firstly turn the
carriage locking switch (8) into the automatic
position (B).
·Press the slice counter switch (2) manual
button (A).
·Press Start blade (4) and Start carriage (5).
The meat slicer will continue to slice until you
press Stop carriage (6/b), which will stop the
range completely.
·By pressing Stop blade (6/a), stop the meat
slicer completely.
·To change the length of the carriage range,
press +/- (1) to optimise the slicing time.
FEEDING AND SLICING PRODUCTS
STANDARD PLATE
N.B.
: the products to be sliced are only fed onto
the plate (see Figure 9) when the graduated
handle is in the 0 position and the motor is
stopped.
The procedure is as follows:
·Lift the meat press arm from the standby
position (18).
·Feed the product onto the plate so that it rests
on the gauge plate.
·Lock the product from above using the serrated
arm (18).
·Use the graduated handle to adjust the slice
thickness.
·Start the meat slicer, based on the different
slice types described in “Operation”.
·The product will slide easily under the blade
and the slice, guided by the slice holder, will fall
on the collection tray.
·Avoid starting the meat slicer while it is empty.
·The meat slicer operating time will always be
limited to the overheating of the motor.
·Sharpen the blade as soon as you notice that
the slices have an uneven or rough edge or
when the shear increases.
·Once the slicing procedure is complete, set the
graduated handle to the “0” position and stop
the appliance by pressing Stop blade (6/a).
BLADE SHARPENING
(Figure 12, Figure 13, Figure 14)
To sharpen the blade (which must be done
regularly, as soon as you notice a reduction in
slicing efficiency), proceed as follows:
·press OFF to ensure that the appliance is
switched off;
·loosen the knob (1), lift (a) the sharpener (2)
and turn it 180° (b) (Figure 12). Allow it to move
to the end of the range (c) so that the blade sits
between both teeth. Lock the knob;
·switch the appliance on by pressing ON;
·tighten the button (3) (Figure 13) and allow the
blade to turn in contact with the tooth for 30/40
seconds so that a slight burr forms along the
blade edge;
·tighten both buttons at the same time for 3 to 4
seconds (3 and 4) and then release them at the
same time (Figure 13);
·once the sharpening procedure is complete,
switch the appliance off and return the
sharpener to its original position, performing
the procedure in reverse order (Figure 14).
·After the sharpening procedure, the tooth
should be cleaned;
N.B.:
To avoid distorting the blade edge, do not
prolong the burring process for more than 3 or
4 seconds.

ORDINARY CLEANING
Firstly, the following clarification needs to be
made: the range of EC automatic gravity feed
professional meat slicers are fitted with electrical
and mechanical safety measures during the
operation and cleaning and maintenance stages.
However, there are
RESIDUAL RISKS
(Machinery Directive 2006/42/EC) that cannot be
fully eliminated and to which this manual refers
through the
CAUTION
boxes: They are related to
the danger of cutting yourself while handling the
blade during the slicing and maintenance
procedures.
GENERAL COMMENTS
Before using the machine for the first time,
clean the area in contact with food with
(lukewarm) soapy water, rinse and leave to dry.
The appliance should be cleaned at least once
a day or more often if necessary.
·All of the meat slicer parts that come into direct
or indirect contact with the food must be
cleaned thoroughly.
·The meat slicer must not be cleaned using
high-pressure washers or high-pressure jets of
water. You must not use utensils, brushes or
any other object that could damage the slicer
surface either.
Before cleaning, you must:
·unplug from the mains to completely isolate the
slicer from the system;
·put the graduated handle that regulates the
gauge plate in the “0” position;
·remove the carriage.
MEAT SLICER CLEANING
PROCEDURE
CAUTION:
only use neutral detergents with
water (pH7) to clean the slicer.
CLEANING THE MEAT HOLDER PLATE
The assembly (plate + arm + foot) can be removed
easily:
·set the graduated handle (1) to “0”;
·unscrew the handle (3);
·connect the plate and slide the assembly to the
end of the range in the direction of the arrow (A);
·lift the assembly in the direction of the arrow (B);
·By separating the assembly in this way you
can clean it easily.
CLEANING THE BLADE, BLADE COVER
AND RING
Unscrew the blade cover button handle (1)
(Figure 16) to remove the blade cover (2)
Insert a damp cloth between the blade and the
blade cover ring (Figure 17). Turn it once
together with the blade
