Slicing
(切肉)
(1) Take the frozen meat out of the refrigerator and put them in the foam box or
other tools a few hours to thaw. The thaw temperature should be -5
℃
so that the
frozen meat’s inner temperature conforms to the outside ones. Press the center of the
meat gently with your fingernail. If the meat feels soft, it means that they are ready
to be slicing. The experience is that meat at the temperature between -5
℃
and 8
℃
is
best for the slicing.
(2) Lift the food fixing arm of the food tray. Put away the food that is going to be
possessed and push the T bar on the food fixing device. Then twist the knob on the
clamp box and put down the meat press block. Press the button switch of the blade
and the reciprocating motor to start the machine.
Sharpening
(打磨刀片)
(1)The blade should be sharpened frequently and softly. Before the sharpening, clean
the oil stains on the blade first to prevent it from smearing on the grinding wheel.
Once the grinding wheel smeared, remember to clean it.
(2)After loosening the fixing arm of the knife board, uplift the grinding wheel and
rotate it to the position that is going to sharpen the blade. Then screw down the
fixing arm of the grinding wheel.
(3)Turn off the back-and-forth motor and start the slicing motor. By this time, the
blade is just rotating. Then push the arm on the grinding wheel support to the back
of the blade edge. Generally it will take about 20 to 40 second for the sharpening.
The blade will be the sharpest when there is some burr on the front of the blade.
(4)When finish sharpening, turn off the machine and put the grinding wheel support
away.
