Attach the three temperature gauges to the door. Be sure to tighten only
finger tight.

Remove the bolts and washers that are attached to the door handle and
side handle. Using the separate longer bolts and washers provided, attach
the door handle and side handle to the cabinet.

Attach the side vent and dampener as shown using the (6) bolts that are
already threaded into the side wall.
10.
Install the heat diffuser and drip pan above the burnpot.
11.
Install all four stainless steel racks.
12.
Wipe down the racks and inside of the smoker with vegetable oil to season it.
**There is a solid
21” x 22”
baffle plate that can be used to create two separate
cooking chambers within the smoker or a top warming area. If it is desired to utilize
the entire cooking area, the baffle plate will not be used.**
**The Caution sticker on the hopper assembly can be removed if desired.**
Optional Circulation Fan
When mounting the circulation fan, remove the fan housing and
attach the fan to the top corner of the cabinet using the four
screws provided. Once mounted, re-attach the housing.
Install fan onto the end of the shaft and secure with the REVERSE
THREAD nut.
