Chop the almonds 15 seconds, speed 6 and put aside.
Put the sugar and the water into the jug and program
8 minutes, 120º, speed 2. Add the almond, the cooked
sweet potato and mix 2 minutes, speed 5. Add the
egg and mix 1 minute, speed 5. Remove and work
the mixture by hand until it is uniform. Leave to cool.
Divide the mixture into as many parts as the number of
flavours you would like to make.
Coffee: Add soluble coffee diluted in water to the
mixture and make little squashed balls, giving them the
form of a coffee grain.
Coconut: Add grated coconut to the mixture and work
it so that it becomes uniform and makes the form of a
pyramid.
Pine nuts: Make balls with the mixture and dip in egg
white, stick the pine nuts and paint with beaten egg.
Quince: Roll out the mixture, and fill with quince jelly
and roll up making a long worm. Cut into portions and
paint with beaten egg.
Almond: Make thin worms with the mixture and dip in
egg white and the chopped almond. Paint with beaten
egg.
To cook the Panellets bake in a hot oven until the
outside is golden.
Mix the butter and icing sugar, 1 minute, speed 4.
Add the eggs and mix 1.5 minutes, speed 4. Add the
flour, the milled almond, the grated lemon peel and
the salt and program 1.5 minutes speed knead.
Remove the mixture from the jug. Put into an icing
bag and over a tray covered with greaseproof paper,
make biscuits in the shape of your choice.
Preheat the oven to 175º and bake for 20 minutes
until golden.
Attach the mixing paddles to the blades. Pour in
the Water and the sugar to the jug and program 5
minutes, 120º, speed 3.
Add the orange peels and program 60 minutes,
100o, speed 2.
>> This preparation is ideal for accompanying
dessert or chocolate cakes, and also for adding to the
mixtures of cakes.
