Brown Rice Pilaf with Lentils
Serves 4-6
Ingredients
1 cup brown basmati rice, uncooked
2 cups water
1 teaspoon salt
1 tablespoon extra-virgin olive oil
1 cup lentils
2 garlic cloves, minced
2 carrots, peeled and diced
1 medium onion, diced
1 cup tomatoes, diced
2 cups vegetable stock
1 tablespoons chopped fresh parsley
Preparation
1.
In a heat-resistant casserole, combine rice, water and salt.

Place casserole dish into steam oven, select super steam function,
set temperature for 350°F degrees and set timer for 20 minutes.

When cook time is complete, carefully remove casserole from
oven, add remaining ingredients, select steam function, set
temperature for 240°F degrees and timer for 30 minutes.

Stir well, sprinkle with parsley and serve warm.
