8 Storing food
8.2
Shelf life of food
▸ High-protein and high-fat foods are delicate/perishable and have a relatively short
storage life.
▸ Observe best-before and use-by dates.
▸ Produce can generally be stored for longer at low temperature settings. A temperature
of 5 °C in the unfrozen compartment, 1 °C in the ColdFresh temperature zone and
-18 °C in the freezer compartment provide a balanced setting in terms of food quality
and energy consumption – ideal if storing a large variety of products.
8.3
Packaging and containers
▸ Wrap or cover food in the refrigerator compartment to prevent it from drying out and
flavours from transferring.
▸ Transfer the contents of opened tins to sealable containers.
▸ Store raw meat and fish in suitable containers in the refrigerator, so that they do not
come into contact with or drip onto other food.
▸ Store food in the freezer compartment in suitable packaging. Depending on the
product, this may be freezer bags, aluminium foil or plastic boxes. Pack the food as
airtight as possible to prevent freezer burn.
8.4
ColdFresh
The ColdFresh temperature zone is a chill compartment in which food that is suitable can
be stored for up to three times longer than in a standard refrigerator compartment.
Humidity
The humidity can be set on the cover of the individual drawers. However, it also depends
on the quantity, moisture content and type of packaging of the products stored, as well
as on how often the drawers are opened. The following foodstuffs are suitable for the dif-
ferent humidities:
High humidity
Low humidity
Berries, green salad, vegetables, fruit and
mushrooms
Meat, fish, poultry and sausages
Setting the humidity
▸ Set the humidity control

perature zone to the required humidity setting:

Since food spoils quicker through the transmission of germs, animal and vegetable
foodstuffs should be stored separately from each other. If such foodstuffs have to
be stored together in a drawer for reasons of space, it is recommended they be
stored covered or packaged.
Fruit (e.g. tropical fruit) and fruit vegetables (e.g. cucumbers and tomatoes) that
are sensitive to the cold should be stored outside the ColdFresh temperature zone
in order to keep their flavour and condition at their best.
