BATONS
Wash the batons and bake them until, they are
soft. Peel and cut into 6mm circles.

Remove leaves and root, peel and cook in steam
until beetroot is soft. Allow it to cool, cut into

BERRIES
Leave raspberries, bilberries, blackberries
and other berries whole. Prepare berries with
waxy shell (cranberry) using blanching (cooking
technique consisting in immersing the fruit in
hot water (short infusion) and its subsequent
cooling) to shorten the drying time in half.

Drying temperature: 57 ˚C
Properly dried fruit is solid, cranberries are soft.

BROCCOLI
Wash the broccoli and cut off the stalk. Cut the
stems into 8 mm pieces, dry whole flowers.

Wash the cabbage and cut the individual leaves
to the size of the chips.

Cut the tops off and peel carrots.
Cut the 3 mm circles.

Rip and rinse the leaves.
Cut the stems into 8 mm strips.
Drying time: 3-10 hours
Drying temperature: 52 ˚C

CHERRY
Wash the cherries, remove the stems, peel off
and remove stones. Dry with the skin down.
Dried cherries look like raisins. Watch out for
overdrying.

CORN
Peel the corn cob, remove the hair fibers and
cook in steam until the milk clabbers. Remove
the grains from the cob and spread them on the
tray. Stir several times during drying.

Drying temperature: 52 ˚C
Properly dried corn is fragile.
Tip: If you want to prepare the grains for the
subsequent preparation of popcorn, use the
maize meant for this use. Do not peel the grains
until they are well-drenched. Then peel them off
and dry without any cooking for 4-8 hours until
they shrink.
