Directions
Using a box grater, peel and shred the potato.
Place the shredded potato in a thin towel or
cheesecloth and squeeze out as much moisture
as possible.
In a medium bowl, combine the potato, mozzarella,
goat cheese, egg, and spinach together.
Form mixture into a patty about 1-inch thick and
place in the Personal Griddle and close the Cover.
Cook until patty is browned and crisp then flip to
brown other side. Once each side is evenly crisp,
serve and enjoy.

peeled and grated
¼ cup part skim
mozzarella cheese,
shredded
2 tbsp goat cheese
1 egg
½ cup fresh
spinach, chopped
