Setup #1:
Smoking and baking. Heat diffuser plate in and standard cooking grates installed. In this setup, the
variable displacement damper (VDD) is generally pushed in about 6 inches from the right hand side to create
an even temperature across the grates

Setup #2:
Moderate temperature grilling, such as wings and boneless chicken breasts (grate temperatures
up to 350° F): Heat with the diffuser plate in place and a set of Grill Grates installed on the left side of the
cooker. The “Direct Grilling Kit” consists of three custom-made aluminum panels which replace two standard
cooking grate

Option: Two sets of grill grates for extended direct grilling surface.
Setup #3:
Direct grilling with searing capability (set temperatures above 400°). Remove the heat diffuser
plate, set the variable displacement damper in the full open position
(FIG 57)
and install the Grill Grates on
the left side of the cooker. (With the heat diffuser/drip plate removed, some users prefer to line the bottom
of the cooker with foil to facilitate cleanup). When setup direct (heat diffuser out, one set of Grill Grates and
standard cooking grates installed), the Yoder allows true direct/indirect cooking.
With a second set of Grill Grates installed on the right side of the Yoder, temperatures are fairly even across
the entire cooking surface; this is true with the diffuser in or out.
